Keto to Vegetarian: The Start (#2)

And so it begins. I spent over two years basically consuming meat. Not complaining. However, the Keto diet (as as it was) left me with cravings.

One of the toughest times was during the summer. Fruit. I missed fruit most of all. Bread, too. Fruit, however, I missed most. Today while grocery shopping I went a little fruit overboard.

A key for me while transitioning from Keto to Vegetarian is going to be keeping my carbs as low as possible. No sugar (added), and minimal starches. I refuse to eat white bread, white rice, and the likes.

I am planning to focus on (as I had before) obtaining my daily carbohydrate intake from fruits and vegetables. Even then, I will be watching the sugars. I found a helpful vegetarian macro on-line. It indicated 25% carbs / 45% protein and 30% fat per day. (I am doing this with a base of 1,200 calories, not including additional calories to supplement calories burned during exercise).

So what did I buy to get started? I bought Gala apples, pears, bananas, a pineapple, a melon, a cantaloupe, green grapes, red grapes, grapefruit, oranges, avocados, celery, fresh spinach, red and yellow peppers, whole grain oatmeal, whole grain bread, peanut butter, almond milk, a variety of Goya dry beans, and some whole grains like Quinona, and chia seeds, and ground flax seeds.

I am not a doctor, nor do I play one on TV. I kicked this off with a sixteen-hour fast. This diet is me starting out –and learning as I go. I have several sources (friends) who have agreed to help answer my questions, point me in right directions why I stray, and share meal ideas with me!

The other day I ordered a blender. I plan to get into juicing.

Overall the shopping was expensive. I went to Walmart. In the future my girlfriend and I have agreed to hit the public market for the best deals and great savings.
